This dish of black beans and white rice is also known as Arroz Moro or Moros y Cristianos, literally "Moors and Christians."
2 cups black beans
3 cups white rice
10 cups water
1½ lb salt pork or bacon
5 peppers Orange Yellow Green
20 Garlic Cloves crushed
4 tbsp Cumin
5 tbsp Olive Oil
Salt to taste
Soak black beans in water overnight. Cook black beans until done.
Quarter the peppers and onions. Crush the garlic cloves. Slice salt pork or bacon if you are using that. Saute onions, bell peppers, in a large pot and then add the garlic and cumin on medium flame for 3-4 minutes until tender
Add in the rice and stir
Add cooked beans and the water cooked in
After water has been absorbed, then place lid on pot- simmer until rice is done
