Palenta (Corn Porridge)

Grow your own corn and harvest the corn to make corn flower and cornmeal. Plant onions. One summer of time required for this recipe.

2 cups water
1 cup cornmeal, organic, preferably hand ground or freshly grinded
teaspoon salt

Topping:
1 cup organic sour cream
pound organic butter
1 cup creamed organic cottage cheese
Green onions, chopped as desired

Boil water and add in teaspoon of salt. Slowly and gradually add 1 cup of cornmeal. To do this take three deep breaths, inhaling for five counts and exhaling for 10 counts while gradually adding in the cornmeal.

Topping- mix all ingredients with 1 cup sour cream and 1 cup creamed cottage cheese. Set aside.

Melt the butter, place in the chopped onion, browning the onions. Spoon the palenta on the platter. Spread the sour cream mixture over the palenta. The final step is to pour the browned butter and onions.
